Deer burgers.

Postby 13Point » Sat Jul 09, 2011 12:23 pm

Making some deer burgers today, my grandaughter would rather have them over regular hamburgers. I put the meat in a bowl, add season salt, garlic, chopped green onion, cayanne pepper in the adults. I can't cook them on the grill cause they fall apart, I don't have any fat added to mine. I cook them on a griddle and when done melt cheese on them to hold them together.....good stuff. Put them on a bun with just sailt and pepper and a hunk of tomoato and eat til you can't move.

All my deer grindings go into sausage, I butcher a calf every year my last had a processed weight of 905lb and that was no head or soup bones, this place I have been using the last 2 years does not have a scale for live weight so I do not know my ratio but I use to get 55 to 60 percent from my calves that would put this one close to a ton live weight and he cleared a 5 foot fence just 1 month before processing :P

I grilled some Vension Taco burgers with cheese topped with red onion slices, lettuce, tomatoes, pickles, and served with steak fries.

I took three packages (lbs?) of ground vension and mixed it with two packages of taco seasoning.

I take the pakages of seasoning and mixed it with water in a bowl prior to mixing it in the meat to keep it from being gritty in the patties. Not too much water or the patties get soggy.

Even the wife and daughter will eat them
